BAKED CAULIFLOWER & BACON
USING CO-OP GOLD SIDE BACON

|2||cups panko bread crumbs|
|1||head cauliflower, broken into florets|
|6||slices Co-op Gold side bacon, cooked and cut into pieces|

Preheat oven to 400°F. Line a baking sheet with parchment paper.
Whisk eggs, salt, and pepper together in a bowl. Place panko bread crumbs in another bowl.
Dip each cauliflower floret in egg mixture to coat, then dip each floret into bread crumbs to coat; place on prepared baking sheet.
Bake in the preheated oven until tender and lightly browned, turning once, around 25 minutes.
Place cooked cauliflower in a baking dish and sprinkle with bacon pieces.
