BAKED CAULIFLOWER & BACON

USING CO-OP GOLD SIDE BACON

INGREDIENTS

2   eggs
¼   teaspoon salt
¼   ground black pepper
2   cups panko bread crumbs
1   head cauliflower, broken into florets
6   slices Co-op Gold side bacon, cooked and cut into pieces

DIRECTIONS

  • Prep. Time: 15 minutes
  • Cook Time: 25 minutes
  • Serves: 4

Preheat oven to 400°F. Line a baking sheet with parchment paper.


Whisk eggs, salt, and pepper together in a bowl. Place panko bread crumbs in another bowl.


Dip each cauliflower floret in egg mixture to coat, then dip each floret into bread crumbs to coat; place on prepared baking sheet.


Bake in the preheated oven until tender and lightly browned, turning once, around 25 minutes.


Place cooked cauliflower in a baking dish and sprinkle with bacon pieces.
