CHICKEN VEGETABLE SOUP WITH ROTINI

USING CO-OP GOLD ROTINI NOODLES

INGREDIENTS

1   tablespoons olive oil
3   tablespoons butter
1   large onion, chopped
3-4   whole carrots, sliced
4   stalks of celery, sliced
2   cloves garlic, minced
2   tablespoons flour
2   teaspoons CO-OP GOLD Italian Seasoning
8   cups chicken broth, low sodium
1   540 ml can CO-OP GOLD diced tomatoes
2   tablespoons tomato paste
3-4   cups cooked chicken
1   250 gr CO-OP GOLD Rotini Noodles
3   tablespoons fresh parsley

DIRECTIONS

  • Prep. Time: 10 minutes
  • Cook Time: approximately 45 minutes
  • Serves: 4

Cook onion, celery, carrots, and garlic clove in olive oil and butter over medium heat for about 5 minutes, or until slighly softened.


Stir in flour and seasoning. Cook for 2 minutes.


Add broth, tomatoes, tomato paste, and cooked chicken. Bring to a boil, reduce heat and simmer covered for 20-30 minutes.


Remove cover and stir in CO-OP GOLD Rotini. Cook 12 minutes or until pasta is tender.


Garnish with fresh chopped parsley.
