CHICKEN VEGETABLE SOUP WITH ROTINI
USING CO-OP GOLD ROTINI NOODLES

|1||large onion, chopped|
|3-4||whole carrots, sliced|
|4||stalks of celery, sliced|
|2||cloves garlic, minced|
|2||teaspoons CO-OP GOLD Italian Seasoning|
|8||cups chicken broth, low sodium|
|1||540 ml can CO-OP GOLD diced tomatoes|
|2||tablespoons tomato paste|
|3-4||cups cooked chicken|
|1||250 gr CO-OP GOLD Rotini Noodles|
|3||tablespoons fresh parsley|

- Cook Time: approximately 45 minutes
- Serves: 4
Cook onion, celery, carrots, and garlic clove in olive oil and butter over medium heat for about 5 minutes, or until slighly softened.
Stir in flour and seasoning. Cook for 2 minutes.
Add broth, tomatoes, tomato paste, and cooked chicken. Bring to a boil, reduce heat and simmer covered for 20-30 minutes.
Remove cover and stir in CO-OP GOLD Rotini. Cook 12 minutes or until pasta is tender.
Garnish with fresh chopped parsley.
