GREEK YOGURT DIP

USING OIKOS PLAIN GREEK YOGURT

INGREDIENTS

1   cup plain greek yogurt
¼   teaspoon salt
1   medium cucumber, finely chopped
1   tablespoon fresh lemon juice
1   tablespoon extra virgin olive oil
1   tablespoon fresh dill, chopped
½   teaspoon ground black pepper
2   garlic cloves, chopped

DIRECTIONS

  • Prep. Time: 10 minutes
  • Cook Time: 2 hours

Peel garlic and chop coarsely. Sprinkle with salt and mash into puree. Place in a medium bowl.


Peel cucumber and chop finely. Over the sink, squeeze chopped cucumber to extract as much juice as possible. Discard juice and add cucumber to bowl with garlic puree.


Add yogurt, lemon juice, olive oil, dill and pepper. Mix well.


Cover and refrigerate for two hours. Serve as dip at your grill out!
