SHEPHERD'S PIE

USING CO-OP GOLD BEEF BROTH

INGREDIENTS

4   red potatoes
3   large cloves garlic
3   cups sour cream
½   cup shredded cheddar cheese
1   pound extra-lean ground beef
2   tablespoons flour
3   cups frozen mixed vegetables
¾   cup Co-op Gold Beef Broth
1   teaspoon black pepper
2   tablespoons ketchup

DIRECTIONS

  • Prep. Time: 30 minutes
  • Cook Time: 45 minutes
  • Serves: 6

Cook potatoes and garlic in boiling water until tender. Drain, add sour cream and mash until desired consistency. Stir in cheese.


Heat oven to 375°F. Brown meat in a large skillet. Stir in flour, mixed vegetables, broth, and ketchup; cook for 5 minutes, stirring occasionally.


Spoon into an 8-inch baking dish; cover with potatoes.


Bake 18 minutes, or until heated through. Top with remaining cheese; bake until melted.


Serve hot.
