INGREDIENTS

2   teaspoons salt
500   grams CO-OP GOLD dried spaghetti
5   cups chicken broth
250   grams CO-OP GOLD bacon, chopped
4   garlic cloves, chopped
1   egg yolk
½   cup whipping cream
¾   cup parmesan cheese, shredded
3   tablespoons fresh parsley, chopped
  salt and pepper to taste
1   cup frozen peas, optional

DIRECTIONS

  • Prep. Time: 10 minutes
  • Cook Time: approximately 20 minutes
  • Serves: 4-6

Place a large saute pan or dutch oven over medium heat.

Add the bacon and cook until slightly crispy. Scoop out bacon and set on a plate lined with paper towel.

Add chicken broth, garlic, and ½ teaspoon of salt to saute pan or dutch oven. Cover and bring to a boil.

Stir in spaghetti when broth is simmering. Stir well to prevent pasta from sticking together. Cover and simmer for 8-9 minutes, or until the pasta is nearly cooked through.

In another bowl, whisk eggs, cream, and parmesan cheese. Slowly pour the mixture into the pasta once it is cooked to desired doneness while quickly stirring the pasta.

Add frozen peas if using. Let sauce simmer 1-2 minutes to thicken. Stir in parsley and bacon pieces. Add salt and pepper to taste.

Serve immediately.
