TORTILLA SOUP

USING CO-OP GOLD CHICKEN BROTH

INGREDIENTS

1   carton Co-op Gold chicken broth
1   can diced tomatoes, undrained
1   cup frozen whole kernel corn
1   cup cooked chicken, shredded
1   teaspoon hot sauce

TOPPINGS

1   cup tortilla strips
  shredded cheddar cheese
  green onions, sliced
  cilantro sprigs
  avocado, sliced

DIRECTIONS

  • Prep. Time: 15 minutes
  • Cook Time: 30 minutes
  • Serves: 6

Cook chicken thoroughly, set aside and let cool. Shred chicken once cool.


Combine broth, undrained tomatoes, and corn in a medium sauce pan.


Bring to a boil over high heat. Reduce to medium heat, stir in chicken and hot sauce.


Simmer 5 minutes, stirring occasionally.


Top with tortilla strips, cheese, onions, cilantro, and avocado.
